Nutritious Should be Delicious!

Baked Sweet Potato Fries



1 medium sweet potato

1tsp olive oil

¼ tsp fresh ground pepper

1 Tbsp ketchup



Pre-heat oven to 450°

Run sweet potato under warm water and rub with hands to remove any biological matter. I leave the skins on for extra nutrition, but you may remove them if you please. Dry completely so that olive oil will coat and prevent sogginess. Chop off ends. Cut in half at the waist.  Cut those halves in half lengthwise and then begin to chop into smaller fries.  Place raw sweet potato fries onto baking sheet.  Drizzle with olive oil and ground black pepper.  Toss to coat evenly. Arrange fries on baking sheet so they are not touching. Place in oven and set timer for 12 minutes.  Remove from oven and flip.  Place back in oven for an additional 12 minutes until perfectly crispy! Bake longer for increased crispiness.  Enjoy with a side of ketchup.
