Corn Fritters with Honey Butter Dipping Sauce

Ingredients:

1 clove garlic, minced

1 shallot, chopped small

½ roasted red pepper, chopped small

1 Tbsp olive oil

 

1/3 cup cornmeal

1/3 cup white wheat flour

½ tsp cayenne pepper

½ tsp red pepper flakes

½ tsp paprika

½ tsp baking powder

Ground pepper as desired

 

1 large egg

1/3 cup buttermilk

2 Tbsp soft butter

1 cup room temperature corn kernels (fresh, frozen or canned)

½ cup creamed corn

5 green onions, sliced thin

 

2 Tbsp olive oil

 

Directions:

Mince garlic, chop shallot and add to pan preheated to med heat with olive oil. Roast red pepper in the same pan.

 

Roasted Red Pepper~

Remove seeds and stems from red pepper and slice into 2 portions. Flatten with fingers and place inner side down on pan. Roast on med-low heat for ~5 minutes on each side until soft and slightly blackened. Then, chop small and place back in pan on low heat with garlic and shallots when they are soft.

 

Meanwhile mix cornmeal, flour, cayenne, red pepper flakes, paprika, baking soda and pepper. Then, mix in egg, buttermilk, butter, corn kernels, creamed corn and green onions. Finally mix in garlic, shallots and roasted red pepper from pan.

 

Place additional 2 Tbsp olive oil in pan and warm to medium heat. Pour batter into desired sized fritters. Fry lightly on each side for ~3 minutes or until browned.

 

Serve with honey butter for delicious dipping.
