Cornbread Muffins



1 cup all-purpose flour

1 cup yellow cornmeal

2/3 cup white sugar

3 1/2 teaspoons baking powder

1 large egg

1 cup skim milk

1/3 cup sunflower oil

1 can corn



Preheat oven to 400º F. Spray, lightly coat with olive oil or place muffin cups in muffin tin. In a large bowl, combine dry ingredients and mix.  Then, add wet ingredients one at a time and stir until well combined. Pour batter into muffin tin filling each cup almost full. Bake for 30 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
